Lentils are an amazingly health food that surprisingly, many people don’t take advantage of. Legumes like lentils are not only a cheap source of protein, but are also fat-free, high in fiber and rich in a number of essential nutrients. Adding lentils to your diet offers a number of health benefits, from helping you control your weight to promoting heart health.
This recipe is always a winner in my cooking classes and will transform a lentil skeptic into a supporter.
- 1.5 Cups of Red Lentils
- 2 tablespoons Olive Oil
- 3 carrots/small sweet potato diced
- 1 onion diced
- 3 cloves of garlic
- 1 handful of cilantro
- 1 teaspoon of lemon zest
- 1 cup oat bran covered in boiling water
- 1 tablespoon kosher salt
- Fresh ground pepper
- 2 teaspoons cumin
- Sprinkle cayenne pepper to taste
- 2 eggs
Chop vegetables and herbs and prepare the oat bran. Put the lentils and vegetables into a pot and cover with water.
Cook 5-10 minutes until the vegetables are soft. Strain the mixture well and pour into a mixing bowl.
Add remaining ingredients and mix well. Let the mixture sit for a few minutes while you heat the oil.
Bake the mixture in a kugel or fry as patties in the olive oil until golden brown on both sides.
